燃气用大火比用小火烹调时间短，可以减少热量散失。但也不宜让火超出锅底，以免浪费燃气。夏季气温高，烧开水前先不加盖，让比空气温度低的水与空气进行热交换，等自然升温至空气温度时再加盖烧水，可省燃气。烧煮前，先擦干锅外的水滴，能够煮的食物尽量不用蒸的方法烹饪，不易煮烂的食品用高压锅或无油烟不锈钢锅烧煮、加热熟食用微波炉等等方法，也都有助于节省燃气。
